These naturally low yielding vines produce 4-5 tonnes per hectare, hand picked in the middle of March. The grapes were de-stemmed and crushed, then cold soaked and slowly fermentated at 15-22°C to enhance flavours. Fermentation took place in 3rd \u0026amp; 4th fill barrels for about 3 weeks with a combination of wild and selected yeast strains, then left on the thick lees for 6 months and barrel aged for 8 months.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003cdiv class=\"half makefullwidth\"\u003e\n\u003cp class=\"title\"\u003e\u003cstrong\u003eTasting notes\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eRipe and complex aromas of mango and citrus with butterscotch and spicy notes. The IPW scheme, started in 1998, consists of a set of audited guidelines specifying agricultural practices, manufacturing practices and bottling activities. Sustainability is one of the core values of the winery as they rely on a biological asset, grapes. Their approach is focused on environmental sustainability, as the environment is a focal point when farming high quality grapes. They implement sustainability by reducing their carbon footprint, water usage and the need for electricity by using solar energy.
