Following délestage twice a day for about 3 weeks to ensure a gentle extraction of colour and tannins, the grapes are pressed, and a portion will then go into barrels and puncheons where the wine will spend the next 10 months of its life. Topped regularly, the malolactic fermentation happens when the winery warms up in spring. Our winery is situated high above Tasman Bay on the Moutere Hills, where our 10ha of long-established vineyards are defined by Moutere’s signature clay soils.
