Grapes are handpicked and pressed with selected yeasts. A third of the must is fermented in French barrels, 10% n foudres, and the remaining in steel tanks at low temperatures (12–14ºC) to preserve the aromas and freshness in the wine. Once fermentation was complete, the new wine is left in contact with its fine lees with periodic stirring (batonnage).. The wine is aged for 6 months. 35% in previously used French barrels, 10% in new foudres, and 55% in stainless steel.
