A special yeast is then added to the agave juices before fermentation, which lasts as long as 72 hours before distillation.\u003c\/p\u003e\n\u003cp\u003eRooster Rojo reposado is subsequently double pot distilled in stainless steel pot stills, before being 'rested' in oak.
