Production

Adobe is a line of organic reserve wine that reflect the highest quality of the vineyards and a deep respect for the environment and its workers. Everything used to make this organic wine is of natural origin. The grapes were hand picked and undergo a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation takes place at 25º–28ºC with daily pumpovers. The wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. 20% of this wine is aged in oak barrels for 6 months and later reblended to achieve a more complex character.

Tasting notes

Attractive aromas of blackberry accompanied by spicy notes. The palate is concentrated and smooth with vibrant plum, red fruit and a delicate herbal note. Tannins are ripe and provide welcome grip and structure.

Food match

This wine is ideal with well-seasoned, strong-flavored dishes, stuffed cannelloni, grilled beef, pork, or poultry. It also goes very nicely with ripe cheeses, salami, ham, and pastrami.

    A Note on Sustainability

    Emiliana is the first Chilean company to become Regenerative Organic Certified® (ROC®), an international accreditation for regenerative organic agriculture which currently represents the highest standard of sustainable agriculture in the world. The practices of this certification pursue healthy soils, animal welfare, and dignity for workers. In January 2023 Emiliana furthered their commitment to sustainable practices and obtained B Corp Certification. This international accreditation highlights the world's largest organic winery as a company that meets high standards of social, environmental, and economic impact.

    Emiliana began its conversion to organic production in 1998, and today 100% of its properties are organically managed. It is the world’s largest organic winery. Emiliana was the first winery in Latin America to produce a wine with biodynamic certification. Since then, the use of biodynamic practices at its farms and cellars has been accredited. All wines are also certified to use the Vegan Society trademark, which attests that its wines are produced without any animal-derived products.
