Serve between 13 and 14°C with wild salmon tartare and gravlax, or ceviche of Mediterranean sea bream, tuna or bass. Also great with shellfish: langoustines, crayfish in sauce, lobster and grilled lobster.

Vinification and ageing

The different grape varieties are harvested separately at their optimum ripeness. Vinification respects the specific characteristics of each grape variety and terroir. This rosé is made by bleeding, following manual harvesting in the early hours of the morning, when the outside temperature is still cool. The whole bunches are left to macerate in a vat, and the juice is extracted after a short maceration, when the color has reached the desired level. Alcoholic fermentation takes place in the liquid phase, under temperature control, to develop maximum aromas. Part of this wine is vinified in barrels, so as to retain all its freshness and natural acidity. No malolactic fermentation takes place, and the wine is bottled quickly.

Tasting notes

The color is a brilliant pink. On the nose, the intensity of the fruit brings out complex aromas of strawberry and cherry, with hints of licorice. The surprising fullness and roundness on the palate are balanced by the freshness of this cuvée. Lively and elegant, the finish lingers on notes of red berries.
