Clay-limestone plateaus and hillsides exposed to the North/East, South/West and located to the west of Chinon (St Louans). Our region benefits from a temperate semi-oceanic climate conducive to the cultivation of vines.
Culture
"sustainable farming", respectful of the environment with grass cover between the rows in order to limit yields and erosion. Leaf thinning, trellising and green harvesting to optimise the maturity and quality of the grapes.
WINEMAKING
After sorting the grapes on the vine, the harvest is pressed directly. Alcoholic fermentation then begins and is followed by ageing on fine lees to bring fat to the wine. This process promotes the fruity expression and roundness of the Chenin Blanc. Bottling takes place around the end of April - beginning of May.

Agreements
A nice range of accompaniments for this gastronomic cuvée: zucchini flower fritters, an amandine sole filled with green asparagus, an Auvergne truffade, scallops with citrus butter, roast chicken with honey, risotto with leeks - asparagus and lobster bisque.
Feedback
Pale and crystalline gold colour, intense nose, frank, fresh and very aromatic with floral, mineral and citrus notes. Fruity, delicate, tender and rich on the palate.
