Mercurey is the largest appellation in the Côte Chalonnaise. This premier cru is a blend of grapes from a few well-defined plots with an east-south-east orientation, giving it the structure and generosity typical of the appellation. Under conversion to organic farming starting in 2024.
After a mild winter, beginning of spring was marked by unstable weather conditions, which fortunately enough settled down end May with warm and even very warm temperatures. This situation encouraged a rapid blossoming in excellent conditions. Spring ended with a water deficit which was never compensated. July and August were marked by a succession of very warm temperatures and storms. End of August, a very hot weather settled down with temperatures around 35°C which enabled the grapes to perfect their ripeness. At Chanson, the harvest started on September 5 and ended on September 16. The white wines are very expressive with beautiful aromas of pale fleshed fruit and an outstanding structure.
Beautiful ruby color. Floral notes with aromas of ripe red berries mixed with spicy scents. Energetic and complex, with very pure fruit. Dense texture with well-crafted tannins. Very good persistence.
Charcuterie, pâtés, pies, grilled or roasted meats, poultry, regional cheeses (Epoisses, Langres, Citeaux, Brillat-Savarin...) and Comté.

Its practices to protect ecosystems were officially recognized in 2016 with High Environmental Value certification.

The Chanson style

Our wines
On two-thirds of our vineyards in the Côte de Beaune and Côte Chalonnaise, it is the elegant Pinot Noir, Burgundy’s emblematic grape variety, that reveals the many nuances of our soils. The delicate Chardonnay, meanwhile, expresses this diversity through our great Burgundy white wines. Finally, Aligoté completes this palette, offering a lively and precise interpretation of our terroirs…

Sustainability
Among its vineyards in the Côte de Beaune, Domaine Chanson owns 25 hectares of Beaune Premier Cru. This unique heritage makes it the specialist of the appellation and one of its main owners, alongside the Hospices de Beaune.
