The Living Cask



In 1920, renowned connoisseur, Professor George Saintsbury, published Notes on a Cellar. In it he described an old method of drinking a mix of whiskies from a cask that is constantly topped up and never emptied. He wrote: “thus you establish what is called, in the case of sherry, a ‘solera’ in which the constantly changing character of the old constituents doctors the new accessions, and in which these, in turn, freshen and strengthen the old.” Loch Fyne’s The Living Cask takes its inspiration from this long abandoned practice.

The Story So Far...

Why have one Living Cask, when you can have two? Inspired by our award-winning The Living Cask 1745, we created a second cask of equal quality. To begin, we part filled it with our 1745, which we then topped up with a selection of carefully chosen Highland malts. We christened this The Living Cask ‘Batch 1’. Because of how it was made, stocks were limited, and it soon sold out.

From Batch 2 onwards, we've created each release by taking depleted stocks of its predecessor and pouring in additional malts from a variety of regions and distilleries. The Living Cask® will always be an evolution of its Islay origins while every batch builds upon the flavours of the last. Each intriguing expression is a limited release and part of an ongoing series which is as collectable as it is delicious.

The Living Cask Batch 10

Batch 10 has seen the addition of four single malts from Speyside, Highland and Islands. Each malt has been finished in ex-Californian red wine barrels before being added to a percentage of the previous Living Cask Batch 9. Although the Loch Fyne Living Cask has always used a unique process of creating exciting flavours among whisky, the use of ex-wine barrels adds a further level of complexity often avoided by whisky makers. We do like a challenge, however, and with our Master Blender Tom Aitken's guidance we have come up with another cracker, weaving together a variety of whisky styles with the influence of the wine barrels. A truly unique expression of Loch Fyne Living Cask.

Please note: Our Loch Fyne Whiskies products are presented in handmade glass bottles. Due to their handmade nature, these bottles can show small imperfections such as grooves and seams in the glass.


Hamish Says...

Our Hamish has had a sip and jotted down his thoughts.

 

Nose: a top note of citrus and burnt orange peel used in a classic old fashioned cocktail, alongside toffee, banana and crunchy cereals dripping with honey.

Palate: fig and physalis fruits; the wine impact gives it a tartness followed by citrus once more, jelly orange sweets and also some grapefruit.

Finish: a gentle cinnamon spice greets the finish which has a chewy texture; aftertaste stays sweet and fruity, with prune juice and almonds.
