Production
The vines were planted in 1993 at the Fundo Quitralman, Mulchén vineyard in the Bio-Bio Valley, 500km south of Santiago. Grapes are handpicked and pressed with selected yeasts. A third of the must is fermented in French barrels, 10% n foudres, and the remaining in steel tanks at low temperatures (12–14ºC) to preserve the aromas and freshness in the wine. Once fermentation was complete, the new wine is left in contact with its fine lees with periodic stirring (batonnage).. The wine is aged for 6 months. 35% in previously used French barrels, 10% in new foudres, and 55% in stainless steel. Prior to bottling, the wine is fined and cold stabilized to prevent any future tartaric precipitation.
Tasting notes
Quietly complex on the nose with fresh lime notes combining with a steely minerality and gentle honeysuckle flora. The palate is mid-weight and off-dry with persistent flavours of lime, there is a natural salinity which gives contrast yet lovely balance. It finishes clean with a lingering flinty character.
Food match
Oysters and shellfish, white meats and smoked salmon. Also great with vegetarian dishes and Asian cuisine.

A Note on Sustainability
Emiliana is the first Chilean company to become Regenerative Organic Certified® (ROC®), an international accreditation for regenerative organic agriculture which currently represents the highest standard of sustainable agriculture in the world. The practices of this certification pursue healthy soils, animal welfare, and dignity for workers. In January 2023 Emiliana furthered their commitment to sustainable practices and obtained B Corp Certification. This international accreditation highlights the world's largest organic winery as a company that meets high standards of social, environmental, and economic impact.
Emiliana began its conversion to organic production in 1998, and today 100% of its properties are organically managed. It is the world’s largest organic winery. Emiliana was the first winery in Latin America to produce a wine with biodynamic certification. Since then, the use of biodynamic practices at its farms and cellars has been accredited. All wines are also certified to use the Vegan Society trademark, which attests that its wines are produced without any animal-derived products.
